Nigella’s ‘Everyday’ Brownies with Salted Caramel

I had a small, unopened jar of salted butter caramel sauce from France begging to be used and Valentine’s Day was the perfect excuse. Salted caramel cupcakes were an option until the thought of hot brownies with salted butter caramel & vanilla ice cream won hands down.

After a quick  search, I came across Nigella’s recipe for ‘Everyday’ Brownies, originally published in her book, Nigella’s Kitchen. These brownies are an alternative to a richer(!!) version that she has published in the past.  Still a very misleading name though as one should most certainly not be eating these brownies every day. 😉

Nigella’s brownies are a perfect mix of gooey chocolate and cake and I highly recommend her recipe for a serious chocolate fix.

The added warm drizzle of French salted caramel takes Nigella’s ‘everyday’ brownies to another level….here’s the recipe if you want to have a go!

Nigella’s ‘Everyday’ Brownies with Salted Caramel

Ingredients

150g unsalted butter

300g light brown muscovado sugar (I used light brown sugar as didn’t have musvocado!)

75g cocoa powder

150g plain flour

1 teaspoon bicarbonate of soda

pinch of salt

4 eggs

1 teaspoon vanilla extract

150g milk chocolate (I used Green & Black Organic Milk), chopped into small bits

Method

  • Preheat the oven to 190C and line a baking tin with parchment paper.
  • Melt the butter over a slow heat in a saucepan.
  • Once it’s melted, add the sugar, and blend it with the melted butter.
  • Remove from heat and mix in the cocoa powder, flour, bicarb, salt. It will form a fairly dry mixture.
  • In a separate bowl, whisk the eggs with the vanilla extract and add into the brownie mixture in the pan.
  • Now, add the chopped chocolate into the mix and stir.
  • Pour into the lined baking tin and bake for about 25 minutes.
  • It will look dry and firm from the top but still feel quite wobbly inside which is what Nigella wants. I actually left it in there for an extra 4 minutes as I wanted more of a bite.
  • Leave pan to cool completely before cutting into desired brownie size.

These brownies taste best warm so reheat them in the microwave for 15 seconds before serving with a scoop of vanilla ice cream. And, don’t forget to drizzle some salted caramel sauce  – it really does lift these ‘everyday’ brownies to a delicious, special occasion dessert. YUM!

      Hi Deena, They were decadent and didn’t last too long. I took some as a present for a friend and we devoured the rest pretty quickly…whoops!

    What a yummy treat! But, after all, any French product does tend to make one feel fancy and special, doesn’t it?
