Marinated Halloumi & Spinach Salad with Maille Harissa Dressing

I was recently invited by Maille, the famous French gourmet brand to enter the Maille Culinary Challenge and develop recipes using a couple of their products.

I love Maille mustard and was delighted with the opportunity to experiment with flavours. I chose Citron et Harissa (White Wine, Lemon & Harissa Spicy Mustard)and Noix de Coco et Epices Colombo (White Wine, Coconut and Colombo Spices) as my spicy mustard weapons.

Today’s recipe uses the Maille Citron et Harissa mustard. Harissa is a spicy red pepper paste commonly used in North African cooking. My colourful salad is a tasty marriage of flavours and textures with the marinated cheese, tangy pomegranate, walnuts and of course, the Maille Harissa mustard dressing.

The mint-harissa-mustard marinated Halloumi will also taste delicious grilled on the BBQ in the summer. Yum!

Marinated Halloumi & Spinach Salad with Maille Harissa Dressing 

(Serves 2)

Ingredients

For the Halloumi marinade:

Halloumi, cut into 4-6 rectangular slices

Garlic, 2 cloves

2 Handfuls of mint leaves

Olive oil, 2 tablespoons

Lemon juice, 2 tablespoons

Citron et Harissa Maille mustard, 2 teaspoons

For the Dressing:

Olive oil, 2 tablespoons

Red wine vinegar, 2 tablespoons

Citron et Harissa Maille Mustard, 2 teaspoons

Black pepper to season

For the Salad:

Spinach, 4 handfuls

Pomegranate seeds, 2 tablespoons

Crushed walnuts, 2 tablespoons

Method

1. Prepare the marinade by blitzing the mint, garlic, lemon and mustard in a food processor to make a paste.

2. Add the halloumi to the marinade and set aside for 30 minutes.

3. Mix the ingredients for the dressing in a separate bowl.

4. Combine the spinach, pomegranate, walnuts and dressing in a salad bowl/spinner and serve on to your plate.

5. Place a pan on medium heat and warm the marinated halloumi until soft (around 1 minute on each side.)

6. Serve over the dressed salad.

This salad is tasty, healthy and ready in minutes. Try it and let me know what you think.

      Hi Deena, Thanks for your comment. I love halloumi too and it tasted lovely with the mint and mustard. Will definitely be grilling this for the next BBQ. Hope you are doing well!
