Hungry’s Gorgeous Green Soup

Winter is not my favourite season. One of the few things that makes it somewhat bearable is the license to eat all those delicious, warm comfort foods – curries, stews, pasta…yum!! As much as I love my salads and sushi all year round, I have been consciously seeking out warmer options that are healthy, too.

Mr A and little A were both fighting an evil winter bug (suspected ‘man flu’ – haha) a couple of weeks ago and a hot bowl of soup seemed like a good idea. It all started quite simply by tossing in all the vegetables in the house into a steaming pot of chicken stock. The result was spectacular and is worth sharing here.

I have used carrots, celery, spinach and green pepper along with fresh chopped parsley and bay leaf for added flavour. The soup looks and tastes deceptively creamy but is actually a healthy and nourishing choice for a mid-week dinner. Here’s the recipe if you want to give it a go.

Hungry’s Gorgeous Green Soup

Ingredients

3 bay leaves
2 cloves garlic, chopped
1 red onion, chopped
4 celery sticks, sliced
2 medium carrots, sliced
Spinach, 2 handfuls
Parsley, chopped (around 2 tablespoons)
1 litre chicken stock, I used Kallo Organic
1 tablespoon cornflour
1 tablespoon, butter

Method

1. Chop up all the vegetables and set aside.

2. Melt butter in a pot and add bay leaves, onion and garlic. Cook until the onions soften.

3. Add chopped celery and carrots and cook for a minute or so before adding the chicken stock to the pot.  Stir in the chopped parsley as well.

4. Bring to a boil and then cover the pot and turn down the heat letting it all simmer until the carrots and celery are fully cooked (around 10 minutes)

5. Add the spinach towards the end and cook for another couple of minutes.

6. Mix the cornflour with a bit of water to make a thin paste and add it into the pot. Stir well. You will notice the soup thicken a little.

7. Turn the heat off and allow it to cool slightly. Pick out the bay leaves from the pot before using a hand blender or mixer to puree the rest of the mixture into a creamy, soupy texture.

8. Serve into bowls and garnish with some black pepper and chopped parsley.

9. I don’t need to tell you this but eat it hot! 😉

The soup tastes fabulous on its own but is even better with a side of freshly baked bread still warm from the oven! #winterbliss

    Oooh, I love a good winter soup, especially a green one 😉

    It’s the crusty bread to be eaten with it that really makes the meal for me!

      Yes – I’m totally with you. Green soup is great but it’s all about the crusty bread when it comes to soup!
