White Bean & Cherry Tomato Bruschetta

I am obsessed with Italian food and a classic Bruschetta is one of my many favourite dishes.
I love the simple pleasure of a tomato & basil bruschetta and had only ever made it this way until I saw celebrity chef (and my latest foodie crush), Gino D’Acampo make his Cannellini Bruschetta or what he refers to as ‘more than just posh beans on toast’. š
The thought of cannellini beans, cherry tomatoes and parsley on slightly charred ciabatta was super tempting and I couldn’t resist drawing inspiration from Gino (yet again!) for a yummy bruschetta lunch.
The white bean topping seemed a bit bland on its own but all the flavours did come together in the end resulting in a gorgeous bruschetta that I can’t wait to make again.
I love cherry tomatoes and used more than what the original recipe called for. I also added some red chilli flakes for a bit of a spicy kick. š

White Bean & Cherry Tomato Bruschetta
(Inspired by Gino D’Acampo)
Ingredients
4 slices Ciabbata bread
1 tin (400g) Cannellini beans
120g cherry tomatoes, quartered
1 red onion, thinly sliced
2 tablespoons chopped parsley
1 clove garlic, peeled
Salt and pepper to taste
Red chilli flakes for an extra kick
Extra virgin olive oil for cooking and drizzling
Method
- Drizzle some olive oil on one side of the Ciabbata and season with some salt.
- Heat a griddle plan over high heat and toast the ciabbata for a few minutes on both sides until you start seeing brown griddle lines and the bread is crispy.
- In a separate pan, cook the onion in a little olive oil until softened.
- Add cherry tomatoes and cook for a few seconds followed by the chopped parsley.
- Drain and add the cannellini beans. Season with salt, pepper and chilli flakes and cook for a couple of minutes.
- Rub the clove of garlic on each Ciabbata slice – this step is important as the garlic really brings the flavours together.
- Spoon white beans on toasted bruschetta followed by a drizzle of olive oil. Extra chilli flakes, optional. š
White Bean & Cherry Tomato Bruschetta is delicious on its own as a satisfying light meal or as a delicious starter. Buon Appetito!
